Remember those beans I mentioned... the ones I accidentally slow - cooked for 12 hours on Sunday... Well, yesterday morning before work I turned them into duck fat
refried beans and rice.

I followed the recipe exactly as written and served it with
refried beans and rice.

Here we have my concoction for the evening: sorta -
refried black
beans over Mexican
rice, topped with corn
and mango pico de gallo (you can find a discussion of pico de gallo in the comments section here, if you're not familiar with it.)
I think we'll have
rice and refried beans as side dishes.
It has some heat — my daughter added a spoon of
refried beans and rolled it with
rice & chicken into a burrito.

rice, caramelized onions (sort of fajita style), bronzed carrots (slices of carrot roasted with blackening seasoning
and brown sugar), green
beans cooked with tomatoes
and onion, very thick pureed white
bean soup, about 5 sweet potato fries, a couple of artichoke hearts, a dab of roasted red peppers,
and half of a veggie burger made with black
beans and corn.
Though, we did have some
refried beans and Mexican
rice in the mix, there was plenty that was more «New American» which I felt would be compatible with the Mexican flavors,
and a little Italian that wasn't assertively seasoned, so I decided to go for it.
The enchiladas go well with traditional dishes of
rice,
refried beans,
and a crisp garden salad.
Our personal favorite is a mixture of
refried beans,
rice,
and of course Certified Angus Beef Brand ground beef.
Then add 1 - 2 large spoonfuls of
refried bean mixture to each shell
and 2 spoonfuls of
rice and 1 spoonful of salsa.

and they would come with a big pile of red
rice and a huge mess of
refried beans with melted cheddar on top.

and along side served spicy hot Mexican
