Unsweetened, finely shredded coconut — I love Let's Do Organic Unsweetened Shredded Coconut — Reduced Fat version just because it's a much finer shred of coconut than
regular coconut shreds, although the only ingredient in this product is coconut so don't let the reduced fat label scare you.

shredded coconut (reduced fat — with
regular shredded coconut I would reduce the almond milk to 1 cup).

I love that I can add all kinds of toppings, which you can't really do with a «
regular» smoothie (drinking
shredded coconut and granola would probably not work very well)!
Shredded coconut is a genius swap - in for cookie crumbs in the crust, and incorporating both
coconut and
regular milks in the custard gives it better flavor and a fluffier consistency.

shredded coconut, which was more crisp than
regular.
