In pan cooking, grilling, and other
regular cooking methods, the pan or cooking device is much hotter than you want the food to be when it is done.
It looks like dried veggies retain about the same nutritional content as
regular cooking methods.

This
method is very different from my
regular way of
cooking choy sum, which I stir - fry without any blanching or sauteeing the veggie to release it's moisture.
Secondly, coconut sugar loves to burn — it doesn't handle like normal sugar — and I found that you have to throw out the
