In traditional recipes, the milk contributes to making the pancakes fluffy, so if you are swapping out
regular milk for a
dairy - free
version, it is important that you follow the recipe as it is written.
I prefer to use coconut milk and cream with a sprinkling of
dairy free cheese for a
dairy free
version, but if you have no problems with
dairy feel free to use
regular milk / cream and cheese.
I don't think we'll eat it in place of
regular ice cream, but it's a nice variation from the standard
dairy version and would especially be great for someone that can not eat
dairy.
