The batter will be much harder than
the regular muffin batter, but that's alright.
When mixing the muffin batter I realized that my gluten - free version was stiffer than
regular muffin batter.

The
regular size
muffin pans have 6 - or 12 - cup - shaped depressions with each cup about 3 inches (7.5 cm) in diameter and holds about 1/2 cup or 4 ounces of
batter.
And the
batter will yield around 12 - 15
regular sized
muffins.
In a prepared
muffin tin, scoop
batter into 12
regular sized
muffins.
- Preheat oven to 350 degrees and line 1 pan of
regular muffin tins and 1 pan of mini
muffin tins with cupcake liners (I only used 8
regular sized and 8 mini
muffins for the bouquet)- Add the cake mix, buttermilk, oil, almond extract, and vanilla extract to an electric mixer and mix on medium for 30 seconds - Add eggs one at a time and beat until well mixed - Turn mixer to high and beat for another 2 minutes - Fill liners about 2/3 full with
batter - Bake for 15 - 20 minutes, or until cake tester comes out clean - Allow cupcakes to cool while preparing the cream cheese frosting
(Alternatively, you can bake the
batter in paper - lined
muffin molds; the recipe will yield 10
regular muffins.)
Scoop the
muffin batter into mini or
regular sized tins lined with cupcake cases.
My oven probably runs a bit hot because I made 6
regular sized
muffins from the
batter and baked them for 30 minutes and they were way overdone; 20 minutes probably would've been sufficient.
Note: I baked thirty six of them (in a chocolate - making silicone mold) to make an army and four large ones to show you how, in times of peace, you can also make
regular old
muffins (you could also throw the
batter above in a bread loaf tin and make a loaf).
Had more
batter than expected, so I made 12 mini
muffins (10 mins in oven) along with the 12
regular ones (17 mins in oven).
The
batter will give you a large amount of
regular size
muffins.
