To make very fine rice flour, process
regular rice flour in a food processor, blender or clean coffee grinder until very fine.
But if you decide to substitute not
just regular rice flour but mochiko for the wheat flour, beware that the results will hardly resemble a cupcake!
If you are concerned about this, you can
use regular rice flour, made from grains which have been hulled as they tend to have a milder flavor.
Is
it regular rice flour, or do they mean to say sweet rice flour (Mochiko)?
I subbed coconut oil,
regular rice flour and semi sweet chips as I didn't have the dark ones and it turned out amazing!
Something not to ignore is also the impact of the coconut sugar production on the environment which is by far more sustainable and respectful of the earth than e.g. cane sugar production; it was even named the most sustainable sweetener in the world last year, by The United Nations» Food and Agriculture organization.The wholewheat flour can easily be switched to
a regular rice flour, or also a regular wheat flour if you don't mind the gluten.
You can technically roll the mochi balls in
regular rice flour or cornstarch if you'd like, but simpler works better for me!
