Double the smoked paprika if you are using
regular sharp cheddar.
I used
regular sharp cheddar, not white (I had a ton of
regular sharp cheddar in the fridge just waiting for a home) and it was fine and didn't even look weird.
Like the other reviewer, I used
regular sharp cheddar instead of the smoked cheddar.
Cheese sauce notes: I used garlic chili pepper cheddar for the sauce, but
regular sharp cheddar, pepperjack, or even monterey jack would work well.
My husband finds the habanero cheese to spices so I mixed it with
the regular sharp cheddar.

The bread did not rise as much as the others I made (
regular, cranberry almond, &
sharp cheddar) and was more dense.

Sharp in the sauce, and on top, I sprinkled some of Cabot's Alpine
Cheddar, which I LOVE because of its nutty quality.
