I've updated it to yield
a regular sized loaf, and also to be dairy - free, so it is both more Paleo compliant and suitable to be eaten with meat if you're kosher.
When I previously made it using
a regular sized loaf tin I felt it was a little gummy in the centre, don't get me wrong it still tasted really good but would be best suited to a smaller pan so the centre maintains a cakier crumb.

I do not have mini loaf pans, but rather one
regular size loaf pan and was wondering how long to bake.
This recipe for pumpkin bread makes two very large or three
regular sized loaves so I sent Brian to work with three loaves.
Also, would doubling the recipe make it work for
a regular size loaf pan?

loaf pans and the rest in smaller ceramic
loaf pans.
The
regular loaves look and sound amazing — dimpled or not — but this particular holiday I need small -
sized desserts....
Put into greased muffin tins or an 8x8 baking dish (a
regular loaf pan doesn't work well)- For muffins, I use a 1/4 cup measure to make pretty even
sized.
