I shared a recipe
for homemade coconut
milk this week, which can be used as a
dairy replacement for so many things.
CP Kelco also intends to use its GENU pectins in yoghurts as a
replacement for dairy ingredients, normally provided from skimmed
milk powder or whey to provide functions such as creaminess and viscosity.
I always have some coconut
milk in my pantry, since I think it's such an easy
dairy - free
replacement for cream, and I like using it both in savory and sweet recipes (and on top of my pancakes!).
The lactose intolerant population is growing and coconut cream can be used as a
dairy replacer in products like coffee creamers and ice cream, but also as a
replacement for milk when poured over cereal.
For this buttercream I've used almond
milk as a
replacement, but you could also use any other
dairy - free
milk if you need to avoid nuts too.
Please note, while
dairy alternatives might be interesting to drink occasionally and cook with, they are low in important nutritive factors and are not optimal
for babies or growing children as
replacements for more nutrient dense foods like breast
milk, homemade baby formulas (including the liver based formula), real raw
milk, or bone broth with added calcium.
Coconut
milk is also a great
replacement for dairy, and you can even make ice cream with it!
