If you're not using it immediately (say, drizzling it over steamed vegetables), get it out
of the hot
pan and into a bowl so the
residual heat doesn't continue to push the butter from brown to burnt.
Remove from
heat and continue to gently stir until smooth; the
residual heat from the
pan should be enough to melt the last few bits
of chocolate.
The
residual heat in the
pan will cook the rest
of the fish.
Keeping the
