Cook the brown
rice according to the package instructions (combine 1 cup short grain brown
rice with 2 cups water, bring to a boil, and simmer for 50 minutes).
A lot of spices and herbs were involved, but the prepping and
cooking were easy and
with the addition of some sticky
rice, we had a new favorite in our house, just like that.
The sauce, of which there is plenty (I like a little chicken
with my sauce), is built from tomato and yogurt (no coconut milk this time) though I did accompany
with a coconut infused brown basmati (just add 1 Tbsp of coconut oil to the
rice while
cooking, works like a charm), the boys love it too.
One of my favorite classic Indian recipes is Saag Paneer — spinach
cooked in a perfectly spiced blend of onions, garlic, ginger and peppers and served
with rice or naan.
Once all the stock has been added, the
rice should be
cooked through (
with a slight bite), and creamy.
I
cook one pound of pasta (spaghetti, capellini, or soba noodles), drain it, put it back in the pot
with the following mix: 5 Tbs soy sauce, 2 Tbs each of
rice wine vinegar, honey, and sesame oil.
I did
cook this one a bit more than the package recommended but that was based on my preference for a completely dry
rice mixture and had nothing to do
with the doneness of the
rice itself.
