used buckwheat flour but you could
use brown
rice or whatever other gluten - free
grain flour you have kicking about and yes the crust could definitely be
used for other fruit (or chocolate!)

The type of
rice you
use, matters in this recipe — go for the short -
grain or medium -
grain varieties, as they are moist and sticky, and create a creamier texture.
You can do this with whatever
rice you like, but
using the technique on short
grain rice has to be my favorite!

using: are they largely brown
rice or other ancient

use whatever

rice using my pasta method, lots of water and then strain the
rice, voila you have the perfect separate
grains very efficient and anti-gluppy
