Hi Matthew, I've never really worked with rice malt syrup before but I'm guessing it's similar in texture to maple syrup so it shouldn't affect it in that way.
You can swap in any kind of liquid sweetener instead of the maple syrup, although I'm not sure rice malt syrup is as sweet so you may want to bump it up to 1/3 cup and add a little more flour.
