Rice noodles come in a bunch of different weights
so it depends on your package how much you want to use.
My partner wanted some Thai food,
so we had a «Classic Pad Thai», pan-fried
rice noodles with tamarind sauce, crushed peanuts and bean sprouts.
So I prepared another green version, using Vietnamese, ready - made bánh ướt (you could use previously cooked, wide, brown
rice noodles for an even healthier dish), leeks and zucchini.
So if you are in town, head to Tulegatan / Rådmansgatan on Friday around lunch, and try either the Cambodjan inspired
Rice Noodle Soup, or our Haitian inspired Sweet Potato & Corn soup.
Today I decided to lighten it up a bit,
so I substituted roasted spaghetti squash «
noodles» for the classic
rice noodles.

so many foods!
So while the initial soup usually included chicken and mushrooms, I decided to incorporate other fresh and original ingredients like
rice noodles, bell peppers, and broccoli.
We had left over lentils,
so I cooked some
rice noodles and roasted Brussels sprouts and it was delicious!!
Simply cook up some
rice noodles (They cook
so quickly!)
I started with cilantro
so it would show through, then brown
rice noodles, then carrots, cucumbers, green peppers, green onions, and more cilantro, lastly the boston lettuce.
Off the top of my head other low carb options could be edamame, Primal strips, flax crackers, yuba, seed bars, TVP, kelp
noodles, nori or spring green wraps, cocoa - avocado pudding and of course things like cauliflower «
rice» or «mashed potato», rhubarb crumble (with topping made with almond meal), the new
so delicious sugar free coconut ice creams...

rice noodles were extra thin,
so I soaked them in hot water and then just stirred them in after the bok choy was crisp - tender.
If you, too, are squash rich, try grilled zucchini in general (
so easy, and no pre-draining required), and for a unique twist on soba or

You could make a
noodle salad with any strand pasta — even linguini or spaghetti — although I'd suggest staying away from
rice vermicelli or angel hair, which are tough to work with because they're
so fragile.
