My favourite way to serve this up is on a bed of brown
rice and quinoa (I do a 50 - 50 mix, soaked overnight then cooked in organic vegetable stock), but you could even serve this over some wholewheat
pasta,
or cold on top of
salad greens.
Sometimes, I repurpose dinner leftovers into new creations such as transforming fajita beef strips into baked sweet potato toppings, putting
pasta,
rice or grain remnants into a soup
or chopping up leftover veggies to eat cold in a
salad.
Steam some veggies, add
salad, canned beans (wash first), cooked grains (vary between
rice, quinoa, buckwheat, millet, whole grain
pasta of spelt, wheat, rye, kamut,
rice etc.)
or whole grain bread and you're ready to go.
Serve over
salad,
pasta or rice.
Serve with a big green
salad and some gluten free
pasta,
rice, quinoa,
or riced cauliflower to sop up the sauce.
I love to eat them by themselves, on polenta, in
pasta or rice, on crostini, in
salad - the list goes on and on.
Try using it as a replacement for
rice or pasta, in soups, curries, stews,
salads, crackers
or even baking.
For example,
rice and beans, a whole grain
salad or a vegetarian
pasta dish are good choices.
Toss it with a healthy
pasta like a soba / kamut noodle
or rice noodle, and pair it with a light
salad for a nutritious meal.

These Italian - Style Lentil & Mushroom (Not) Meatballs are great with

It's also great because the chicken is awesome on it's own, stuffed in a pita
or served along side a

My kids usually ate from there with either plain
rice or pasta and a few fresh veggies from the
salad area.
We have
salad bars in all our middle and high schools; we use all whole grains (brown
rice, ww
pasta and breads, ww pizza crust); fresh fruit is the dessert each day, not cakes
or other sweets.
From that selection of vegetables I can make stir - fry, soup, sautee veggies to have with
pasta or rice or chop them up to eat raw as a snack, in a
salad or in wraps with hummus.
For dinner, serve grilled chicken breasts with steamed
rice and vegetables,
or pasta with red sauce and lean ground beef, along with a
salad.
Pack these lunch containers with homemade chicken soup, vegetable stew,
pasta,
rice or with a fruit
salad to keep it cold.
They can be added to
salads (that's the obvious option), soups,
or chopped teeny - tiny and added to
pasta /
rice dishes.
It can be used instead of

Sometimes it can be as simple as getting people to start their menu planning with the starchy dish (are we going to have potatoes (sweet
or white), brown
rice, ww
pasta or quinoa) and then the non-starchy vegetable (mixing bowl sized
salad, half a bunch of broccoli, steamed kale with balsamic / dijon dressing, etc.) and then lastly what small side of meat to have with it.
Many Americans eat
