i just made this with egg replacer for the eggs, and
ricemilk buttermilk (1 c ricemilk, 1 tsp ACV) and it was great!
I doubled the recipe, used 3 cups of liquid (1 cup water, 6 oz pineapple juice, and the remainder split between soymilk and
ricemilk), and used my own gluten - free flour blend, upping the baking powder and baking soda just a bit.
In another bowl mix together
the ricemilk, the coffee, the coconut oil, the maple syrup and the mashed bananas.

I mostly use oat - or
ricemilk — they have a slightly sweet taste even if they're unsweetened!
I haven't tried it on the stove top, so I can't say for sure what
the ricemilk / buckwheat ratio should be or how long it would need to cook.
