A little cottage cheese or
ricotta stirred in
gives it extra creaminess, and instead of wrestling with a whole butternut squash on a weeknight I just dump in a bag of frozen, cubed butternut squash.
I used store - bought
ricotta and let them sit for a good 45 minutes before boiling, and this
gave me a great consistency - not too tough, not too soft.
Give a drizzle of sticky honey over top to compliment the saltiness of the
ricotta and prosciutto and you have yourself an easy and delicious appetizer.
I also used feta cheese in place of the
ricotta, which was delicious and
gave it a greek feel.
Adding kale to the
ricotta mixture
gives the dish an even greater nutritional boost (also check out this pumpkin and kale lasagna roll - ups).

gives you a little different take on the traditional boiled gnocchi, and the texture of the gnocchi holds up really well to the spring veggies you're highlighting, but either way you choose to prepare it you can't go wrong.
I doubled the recipe and replaced 1/3 of the cream cheese with
ricotta cheese, I think it
gives it a really nice texture closer to real cheesecake.

Until I made this I had actually never baked with
ricotta before — not quite sure why it took me so long to
give it a try.

While you can use part skim
ricotta, my preference is to use whole milk
ricotta as it
gives the cheesecake a much richer flavor.
To

ricotta a smoother texture (if needed), stir in 3 - 4 tablespoons of milk until evenly combined.
I also use a little bit of cottage cheese in this mix because the
ricotta is already so dry, and adding the shredded cheese doesn't add much moisture, so the cottage cheese
gives your mix a little something to make it stick.
It also uses
ricotta cheese as opposed to cream cheese that
gives it a lighter texture.

I like to utilize the whey left over from
ricotta cheese making as the liquid component in the dough — it
gives a wonderful texture to a very simple whole spelt dough.
My go - to meatball recipe is this, but after seeing the wonderful Nigel Slater making burgers with the addition of
ricotta I thought I would
give it a go with meatballs: they tasted delicious and were incredibly light in texture.
In addition to the ingredients you have above I like to
give it an additional protein and fiber boost by including ground flax seed meal, cottage cheese or
ricotta, and an egg which I toss in the blender to smooth everything out and then proceed as instructed in your recipe.
If you like, you can also fold to make the ends meet and then

With an interesting assortment of flavors like Apple Pie, The Jelly Sound (strawberry jam,
