I would
roast beets longer than almost all the other vegetables which have a higher water content than beets and roast faster.

roasted beet salad and I will admit, they were really, really good!
For chunks of
beets roasting time will be a bit
longer, just until tender and then thinly slice.
The
beets take the
longest, so you should be able to swap in the remaining vegetables to
roast while the
beets are going.
Place the foil package on a baking sheet and
roast the
beets in the foil until tender, about 1 hour (large
beets will take
longer than small
beets).

I love
beets but don't cook with them all that often because of the
long roasting time and the staining factor... but this recipe looks like a «must try.»
Wrap
beets in foil and place them on a baking sheet to
roast for about 40 minutes (may take
longer for larger
beets).
This is certainly not ideal with a food like
beets because they take a really
long time to cook — usually at least 30 minutes to steam and 60 + minutes to
roast.
Maybe if we scrubbed the
beets well before
roasting and went for a
longer roast time?
The beef wellington,
roasted beets with goat cheese, and pork were the talk of the night and none of the appetizers stayed on the plates
long.
