When your recipe calls for a little bit of alcohol, like a dash of brandy in a
mushroom stroganoff, a drizzle of sherry in a trifle, or a swig of port to reduce your
roasting juices, for the
first time you don't have to spend a fortune on a whole bottle!
The original recipe calls for
roasted aubergine, chickpeas and cherry tomatoes; for this version I
roasted butternut squash (
first one of the season), added in
mushrooms and threw in a few tomatoes which I had sitting in the fridge.
Your
first instinct with
mushrooms is probably to sauté them, but did you know that they're also delicious when
roasted?
