seeds, chopped apples or pears, chia
seeds, hemp hearts,
pumpkin seeds, toasted or candied pecans, slivered almonds,
roasted coconut chips, (brown sugar or maple syrup if you have a sweet tooth).
Roast pumpkin seeds: Separate the gooey
pumpkin pith from its slimy
seeds, and then wash the
seeds well
in a colander.
Go with organic raw
pumpkin seeds rather than the conventional
roasted kind you'll find most often
in stores.

pumpkins currently

Since I can never get enough of
roast vegetables, I thought I would
roast some carrots and butternut for their colour, vitamins and crunch (the carrots at least), lightly steam some thin green beans — ditto vitamins, colour and crunch, throw
in a few kalamata olives and low fat feta and scatter over some finely chopped spring onion and a couple of handfuls of toasted
pumpkin seeds.
To Assemble: When the potatoes are done, cut them
in half, fill them with hummus,
roasted chickpeas,
pumpkin seeds, and other optional toppings, and then drizzle them liberally with the Lemon Tahini Dressing.

I
roast sesame
seed,
pumpkin seed, and unsweetened coconut
in a pan and use it as a topping for sauteed kale or swiss chard.
We made dinner with a little sugar
pumpkin last night and so I decided to soak the
seeds overnight
in the fridge and
roast them this morning.
Salted
roasted pumpkin seeds are great
in salads or just for snacking.
The
pumpkin itself is marinated overnight
in a glorious mix of garlic, ginger and spices to absorb as much flavour as possible, before being
roasted and served with some fresh coriander and sweet pomegranate
seeds.
The other thing I did was add ground cardamom which was nice and added some chai flavouring, as well as
roasted salty
pumpkin seeds just because I like nuts /
seeds in my pudding.
For the
pumpkin filling,
roast one small sugar
pumpkin (cut
in half,
seeds removed) cut - side down on a baking sheet lined with parchment
in the oven at 350F for 25 - 35 minutes (depending on the size of your
pumpkin).

in a 375F oven.
I've found that the key to crispy
roasted pumpkin seeds is to boil them
in salted water for 10 minutes prior to
roasting.
To assemble the salad, combine the cooked quinoa,
roasted squash, cranberries, red onion, toasted
pumpkin seeds in a large bowl.
While your tofu is baking and cabbage is
roasting place your
pumpkin seeds in a small and dry frying pan over medium heat.
Like the recipe for
roasting the
pumpkin slices, place the
seeds in one layer on a rimmed baking sheet (I was using my one rimmed baking sheet, so I used a pizza pan instead).
These are the best
roasted pumpkin seeds you'll ever eat, and they make a lovely snack to have sitting
in little bowls around your home for guests.

Whether you go with fresh
pumpkin seeds this fall or buy your
seeds in bulk form from the health food store, these
seeds are a quick
roast away from becoming a delicious snack.
In truth, I wanted more lemon scented quinoa with kale and
roasted tomatoes and crunchy
pumpkin seeds (my favorite dish of the week).
The only thing I'd say is I didn't like the
pumpkin seeds in the bars — I had used some that I
roasted from Halloween — it made them a little chewy.
For the greatest oomph of fresh
pumpkin seed flavor, it's ideal to
roast the innards scooped out of your Jack O Lantern - to - be, but if you can't wait until Halloween (and for the time being, sourcing a fresh
pumpkin in your neck of the woods is an exercise
in futility), pre-roasted
seeds from the bulk supply section of a natural grocer will also work
in a pinch.
1 To make the puree,
roast chunks of peeled and
seeded pumpkin tossed
in the oil at 190C / 375F / gas mark 5 until cooked through.
Simply
roast a couple of golden kumara (aka orange sweet potato)
in the oven with olive oil, pure maple syrup, fresh ginger, a little cinnamon and
pumpkin seeds.
