cubed the pumpkin into chunks and
roasted them in the oven for about 20m, put the
tofu and pumpkin bits into a bowl and mashed it up but it was pretty dry.
To make it veg - friendly, sub
cubed tofu or
roasted chickpeas.

Tofu 1 can chickpeas, about 15 oz 2 tbsp olive oil 1 cup
roasted, salted almonds 2 tsp Cajun seasoning
Here we marinate
tofu cubes in soy sauce and lime juice with a touch of toasted sesame oil, then
roast them — perfect
tofu every time.
Feel free to play with using different herbs or add a bit of feta or
cubed,
roasted chicken or
tofu.

roasted crushed tomatoes 1 cup vegetable broth 1 can chickpeas 1 cup frozen peas 1 can unsweetened coconut milk Salt and pepper to taste Fresh chopped cilantro for garnish (optional, but oh so good!)
