The base of this asparagus & poached egg salad recipe is one of my favorite spring vegetables -
roasted asparagus spears.
You can serve it with 10
roasted asparagus spears, or 1 cup baked sweet potatoes.
Top with
roasted asparagus spears and two soft - boiled eggs (or however you like your eggs).
Fill them with some prosciutto and Parmesan, maybe a few
roasted asparagus spears.

I have quite a bit of
roasted thin
asparagus spears left from Easter dinner.
After the
asparagus has
roasted, cut the
spears into one - inch pieces and toss together with the rest of the salad.
For my farmer's market fresh
asparagus, I simply
roasted the trimmed
spears with a little olive oil, chopped garlic and parsley for 8 - 10 minutes at 350.

Place the
asparagus spears on the parchment - lined cookie sheet and drizzle with 1 tablespoon of the olive oil
Roast for 3 - 4 minutes, or until a fork pierces the
spear easily, yet the
asparagus is still firm and crisp.
Top with
roasted radishes,
asparagus spears, and alliums and your egg of choice.
Serve this salmon with
roasted broccoli or
asparagus spears or whole green beans for an elegant touch — anything green will do.
Roast until the
asparagus turns bright green and starts to go slightly limp, 5 to 15 minutes (depending on the thickness of the
spears).

roasted red potatoes sprinkled with 2 tablespoons grated Parmesan cheese 520 calories
Roasted Asparagus (you can also try four
spears spritzed with olive - oil spray and topped with 2 tablespoons grated Parmesan cheese, baked for 10 minutes at 400 °)
Add a few
spears of
roasted asparagus or green beans with garlic and almonds.
