Roasting is my favorite way to cook
asparagus, but I never thought to add these classic bruschetta
toppings — it looks delicious.
I substituted 1 - inch pieces of blanched
asparagus for the
roasted squash cubes, threw some fresh mint in with the cilantro, and added a squeeze of lemon juice and a drizzle of olive oil on
top.
I made these for dinner last night and
topped them with
roasted asparagus and peppers, garlic confit, and goat cheese.
I paired it with a salad that I normally wouldn't make at home, a tasty mix of greens

roasted asparagus, thin sliced red onion, farmer's market cherry tomatoes and a homemade citrus balsamic vinaigrette... but thanks to a sale on watercress and arugula today at the store, it was inexpensive and absolutely delicious.

I highly doubt I'll ever pull together a salad of arugula,
