To make this wonderful lunch or snack, simply cook up some fragrant Della Jasmine Rice with
Roasted Garlic, then top with cooked shredded
chicken, cut up tomatoes, fresh mozzarella, fresh
basil, and a little salt and pepper to taste.
I had some
basil pesto and
roasted garlic left to use and it was just too tempting to put them together with some tender
chicken, gooey cheese and warm flatbread!
Check internal temperature with an instant - read thermometer — it should be 170 degrees F. Remove
chicken to your countertop and let rest 10 minutes — it should rise internally to 180 — 182 degrees F. Cut and serve the
chicken; garnish with more fresh
basil and the
roasted lemon wedges.
