I
roasted broccoli and baby carrots instead of cauliflower to suit my family's
tastes.

Roasting garlic makes the cloves rich, buttery and milder in
taste (which is why there are SO MANY CLOVES used in this recipe), while the leeks become slightly sweeter, and the
broccoli gets nutty with just a light crispiness on the outside florets.
I think it would have a very different
taste than the cauliflower here, since
roasted broccoli still sometimes has a touch of bitterness.
Chef Billy Allin's beloved cooking is mature and risk - taking (you'd never believe that carrots could drive a dish until you
taste his
roasted carrot and
broccoli salad with carrot purée, feta, and cider vinaigrette).
For the spinach -
broccoli soup, double duty called: The
broccoli florets got
roasted for garnish and the spinach got blanched to help the soup stay vibrant green (we tried it with un-blanched spinach and it just
tasted like a green juice, so don't skip that step).
I subistuted spinach (kids won't eat) for
broccoli, I used canned fire
roasted tomatoes and it
tasted great!
When we make Savory Bites, meals in the cupcake tin, I use clear bowls filled with the very same vegetable options and I add sautéed spinach, blanched
broccoli, artichoke hearts,
roasted peppers and tomatoes, grilled vegetables, so that when they are making «personal pan pizzas» or penne pasta gratins they can layer in the Colors they are attracted to first, instead of thinking about the
taste.
