My
carrots yielded about 1.5 cups once
roasted and roughly chopped, in case you'd like to convert the
recipe to baby
carrots, sweet potato, or winter squash.
The
roasted carrots are actually fairly moist and combined with the tahini, lemon juice, vinegar, and the warm water I find that there's plenty of liquid in this
recipe — but you can always add additional water (or oil) as desired to adjust the texture.
I tried to find a variety of
recipes, I didn't want them to just be
roast, potatoes and
carrots, which is what my definition of pot
roast used to be.
I chose to
roast carrots as it adds color to the meal, however, you can use this
recipe with all kinds of vegetables.
