I had a different post planned for today, but after
tasting this
roasted cauliflower soup I knew one thing for sure: I had to share this with you immediately.
I think it would have a very different
taste than the
cauliflower here, since
roasted broccoli still sometimes has a touch of bitterness.
I almost feel like
cauliflower would almost be less «offensive»
tasting in this preparation since the
roasted flavor with the apples is actually fairly mild.
Cauliflowers are in season right and their nutty
taste after
roasting is awesome.
In the bowl of a food processor, pulse to combine
roasted cauliflower and garlic, 2 tablespoons toasted pepitas, lemon juice, nutmeg, and cayenne pepper to
taste.
Stir in fresh herbs, salt and pepper to
taste, and place in the oven and
roast, stirring occasionally until
cauliflower is browned and potatoes are cooked through (20 - 30 minutes).
