pumpkin pie spice (or 2 teaspoons cinnamon, 1/2 teaspoon ground ginger, 1/2 teaspoon ground nutmeg) 1 tablespoon maple syrup (admit for no sugar added, add more if you like a sweeter oatmeal) 3 1/2 cups water 1/2 cup unsweetened vanilla almond milk (or any other milk you like) Topping options (any combination of your favorites): pomegranate seeds, chopped apples or pears, chia seeds, hemp hearts,
pumpkin seeds, toasted or candied pecans, slivered almonds,
roasted coconut chips, (brown sugar or maple syrup if you have a sweet tooth).
My favorite is cooking the turkey is
roasted in my roaster so the oven is freed up and if I'm going to splurge it all it will be on homemade

Potatoes by the barrel were
roasted, and
pumpkin pies by the hundred lined the tables.
Seriously though, how can anyone not love
pumpkin in all its sweet shapes and forms, and curries, and
pies, and ice creams, and puddings of all sorts, and in its simplest purest form — just
roasted?!
Whip up some deviled eggs, make some
roasted spiced nuts, bring some cut veggies and baba ganoush, or make a simple low - sugar
pumpkin pie or almond flour cookies.
You can even eat them raw if you like, but my favorite way to eat
pumpkin seeds is
roasted with
pumpkin pie spices.
I'll have to try this with
roasted sweet potatoes... since any form of
pumpkin pie / cheesecake / ice cream is forbidden my house (my bf hates the taste of
pumpkin and I try to use whole vegetables but am too lazy to prep
pumpkin)
2 large eggs, room temperature 1/2 cup granulated sugar 1/4 cup light brown sugar, packed 1/2 cup vegetable oil 1 cup mashed
roasted sweet potato 1 cup sifted all - purpose flour 1 1/2 teaspoons
pumpkin pie spice 1 teaspoon baking powder 1/2 teaspoon salt
This
pumpkin spice coconut latte includes all the flavors of fall —
roasted pumpkin, fall flower honey, and
pumpkin pie spice.
We'd bake
pumpkin bread,
pumpkin cake, and
pumpkin pie, and we would also
roast the
pumpkin seeds in the oven.
As soon as I have a chance, I plan on picking up a bunch of fresh
pie pumpkins,
roasting them, and keeping the puree on hand.
Even if you don't have time to make a
pie now, you can
roast, puree and then freeze the
pumpkin for later.
The seeds I
roasted were from a small
pie pumpkin.
Bob, I've seen several recipes for
pie using
roasted pumpkin.
I was also a little shy of a half cup of almond butter so I ground some
roasted almonds in food processor then dumped into that the eggs, the rest of the almond butter and used my homemade
pumpkin pie spices (1 tsp) and about a half teaspoon of ginger.

This recipe is one of my favorite ways to enjoy beets as it combines them with
