AND by boil the
potatoes we also cut down on the
roasting time
because the
potatoes are already almost soft before they even go in.
It's super healthy from the kale and lemon, but also hearty
because of the

And the only reason the other two didn't have chocolate in it was
because one was crockpot spicy chicken drumsticks and the other was
roasted carrots,

potato dumplings, plus a good dose of basil pesto — extra special bonus points if you made homemade pesto while basil was at its peak back in the summer — and a big handful of seasonal greens

In the winter they're great for making hearty meals like

potatoes and soups & stews and in the warmer months they're perfect for using in place of the oven
because they don't give off as much heat.

This recipe is something I make versions of for myself all the time for quick breakfasts and lunches,
because the combination of
roasted sweet
potatoes, crispy kale, and runny yolks is pretty much irresistible.
To make this recipe, I recommend steaming the sweet
potato because it retains more moisture compared to
roasting.
Because we require a little more carb action to feel full, I like to serve these with a side of
roasted potatoes.
I actually turned down the heat a smudge from my standard
roasted potato recipe,
because we don't want to flambé the cheese before the
potatoes have a chance to completely cook through.
I especially love these bowls
because the combine some of my favorite foods on earth: chorizo, crispy seasoned

The ex graciously offered to feed me his latest culinary masterpiece when I dashed through his door to collect the kids: some sort of curry
roasted chicken and cauliflower and
potatoes that I expect involved him hand - grinding the spices before lovingly rubbing them all over everything
because that's the gourmet way he rolls on Monday nights these days.
