I roasted pumpkin in the oven (which caramelized the sugars in it) and then pureed it.
Roasted pumpkin in cumin and olive oil is like heaven to me.
I used cubed
roasted pumpkin in this recipe but this recipe is versatile.

some roasted pumpkin in the fridge for about a week and it had dried out a little, but this didn't seem to matter!
Start by
roasting the pumpkin in oven or microwave.

Roast the pumpkin in the oven, scrape the flesh from the skin, and mash with a large fork or purée in a blender.
To make pumpkin puree, cut the pumpkin top off, scoop out all the seeds, slice the pumpkin into four pieces, then
roast the pumpkin in the oven for 45 minutes.
And if you've got some leftover
roast pumpkin in the fridge, this meal is ready in minutes.

roasted as a delicious side dish and I completely fell
in love.
(To make it easier to peel the
pumpkin, cut
in half, remove the seeds — and set aside for
roasting!
Don't peel your
pumpkin, especially if its organic - the skin
roasts up beautifully, and a lot of the nutrients are
in fact contained between the skin and flesh.
Just cut

I love making pie with fresh
roasted pumpkin; I find that it tastes silkier, too,
in the recipe I use.
I use my Magic Bullet to quickly mix up a sweet honey balsamic dressing and toss it together with some spinach, pecans and
pumpkin seeds, while my chopped butternut squash is
roasting in the oven.
It is thanksgiving soon here
in Canada and that means gluten free
pumpkin pie,
pumpkin spice syrup,
pumpkin desserts as well as
roasted pumpkin as a side veggie.
Pumpkin seeds are also one of the best sources of zinc, with about 7 mg of zinc
in an ounce of
roasted, shelled seeds.
My advice is to buy 3 to 4 small to medium
pumpkins roast them puree them and keep them
in small batches that you can freeze for feature dishes.

pumpkin pie spice (or 2 teaspoons cinnamon, 1/2 teaspoon ground ginger, 1/2 teaspoon ground nutmeg) 1 tablespoon maple syrup (admit for no sugar added, add more if you like a sweeter oatmeal) 3 1/2 cups water 1/2 cup unsweetened vanilla almond milk (or any other milk you like) Topping options (any combination of your favorites): pomegranate seeds, chopped apples or pears, chia seeds, hemp hearts,
pumpkin seeds, toasted or candied pecans, slivered almonds,
roasted coconut chips, (brown sugar or maple syrup if you have a sweet tooth).
Store your
roasted pumpkin seeds
in an airtight container and enjoy their health benefits, which include everything from combating depression to preventing osteoporosis and prostate problems.
My favorite is cooking the turkey is
roasted in my roaster so the oven is freed up and if I'm going to splurge it all it will be on homemade
