roasted sweet potato tacos, epic falafel bowls with magic sauce, watermelon cilantro limeade and hibiscus iced tea, savory breakfast bowls (recipe coming next week), hikes in Joshua Tree, yoga, and long talks about purpose, passion and how to make the world a better place.

The combination is incredibly delicious (especially with these

The base for these nachos are hunks of
sweet potato tossed in
taco seasoning (aka cumin, chili powder, paprika, and cayenne) and
roasted in a super hot oven until browned and just cooked through.

I most often go for cilantro, which goes just as well with
tacos as it does a
roasted sweet potato and chickpea salad.
When I finally found a way of eating that had me dropping the pounds quickly and allowed me to eat good food (like fish
tacos with mango - avocado salsa, kale and maple -
roasted sweet potato salad, 3 - bean chili and even gluten - free, dairy - free triple chocolate brownies), I knew I'd found my weight loss silver bullet.
To make these

roast sweet potatoes and shallots until the edges are browned and crispy, then I add zucchini the last few minutes of cooking.
