in Roasted Pepper Sauce I know this might be unusual to see, but trust me because this was really delicious.
Chilaquiles are a great way to use up any little leftover bits
in your fridge, like shredded chicken or pork, crumbled bacon,
roasted vegetables, and
tofu.
I just
roasted the veggies
in the oven for 25 minutes while I was cooking the
tofu.
Sweet and sour
tofu with
roasted cashews is a super delicious entree that can be prepared for any occasion
in less than 20 minutes.
Dinner at my
in law's place was pretty standard Chinese dishes: lots of stir fry veggies with meat, pork bone soup,
roasted duck,
roasted pork, oyster omelets, fish noodles and
tofu.
To assemble the bowl add

roast dinner:
tofu / kidney bean burger, half a mini onion squash slathered
in almond butter, some carrot / swede mash made with a bit of almond milk, purple cauliflower, sprouts (my fave!)
Tofu and asparagus come together
in this quick and flavorful stir - fry with
roasted cashews, fresh herbs, and ginger.
Before
roasting in the oven, I recommend placing the
tofu on a plate with a paper towel on top and place a heavy object on top.
It's great
in everything from
roasted veggies to
tofu scrambles.
This helps to release any excess liquid from the
tofu so that when it's
roasting in the oven, it gets a little crispy.

tofu in this recipe to keep it under 30 minutes, with no change
in taste or texture.
