If you've never made slow -
roasted tomatoes before, prepare to have your mind blown because they've got very little to do with the aforementioned packaged variety in all of the best ways: they're so flavorful that you might think you think someone snuck into your oven and doused them in both vinegar and salt, even if you did neither.

If you don't feel like taking this extra step, just add dry basil and / or oregano to the
tomatoes,
before roasting.
When I make this lasagna, I usually prepare the
roasted vegetables in the morning and then mix with the pasta sauce and
tomatoes and refrigerate until about an hour
before supper.
This dish is based on the same ingredients, but instead of making a traditional Ajvar, I diced the ingredients
before roasting, and added red onion,
tomato and Poblano peppers.
You could also make a
roasted version and just quickly hit
roasted cherry
tomatoes into the pan with the olive oil and garlic
before using the sauce.
Broccoli and peppers are great, and you can also try zucchini,
tomatoes or cherry
tomatoes, carrots, aubergine, asparagus, cauliflower, etc... to make the veggies more flavorful you could also
roast or grill them,

I made this for myself in my Mr. Bento set with leftovers from lunch the night
