At Souvla, you can get a sandwich or salad made from one of three proteins — humanely raised pork shoulder with minted Greek yogurt, free - range chicken with fennel and navel orange, and lamb leg with harissa - spiked yogurt — or a vegetable (
roasted white sweet potato), along with a few sides and frozen Greek yogurt for dessert.

It is absolutely outstanding combination with any
white fleshy fish, shrimp, chicken, turkey or
roasted vegetables and root vegetables, like zucchinis,
sweet potatoes, mushrooms, mirliton, carrots, rutabagas, parsnips... among others.

To make a sheet pan meal, I just marinate the veggies and protein I want to include (and typically I include a starch like
sweet potatoes,
white potatoes, or squash) and
roast on a sheet pan at 400 degrees Fahrenheit for about 25 minutes.
Other odds and ends — all in very small amounts of 2 to 4 tablespoons — in addition to the refried beans, Mexican rice, eggplant, tortillas, and grilled bread included a more risotto - like rice, caramelized onions (sort of fajita style), bronzed carrots (slices of carrot
roasted with blackening seasoning and brown sugar), green beans cooked with tomatoes and onion, very thick pureed
white bean soup, about 5
sweet potato fries, a couple of artichoke hearts, a dab of
roasted red peppers, and half of a veggie burger made with black beans and corn.
Just about every week, I put either
sweet potatoes or
white potatoes + carrots in the bottom of a deep cast iron skillet, put a chicken on top of the veggies and
roast it all at the same time.

Here's a delectably different kind of pizza — a vegan
white pizza brimming with well - cooked onions,
roasted sweet potato, and briny olives.

roast the beets, then the
white sweet potatoes, carrots, and finally, the red onion.

white fish and even when baked with chicken!
