The awesome thing about this salad is that it is totally customize - able to whatever vegetables you have on hand —
roasted Brussels sprouts,
roasted zucchini, broccoli, or cauliflower would all be awesome
as toppings.
For the salad: 1 1/2 lbs
zucchini 1 lb cherry or grape tomatoes, sliced in half 1/2 lb cucumber, sliced into half moons (about 1 1/2 cups) 1/2 cup finely diced red onion 1/2 cup
roasted, salted peanuts 1 cup fresh herbs, such
as: Thai basil, mint, cilantro (or a mix of all three), chopped

zucchini sticks, sprinkled with Parmesan cheese are
roasted to perfection.
Feel free to add in any other veggies you like such
as onion,
zucchini, or
roasted broccoli.
I love to serve this with a seasonal green and vegetable salad with a light vinaigrette such
as a lemon Dijon or balsamic or
roasted zucchini, broccoli or braised bitter greens.
This is also good on raw
zucchini pasta,
as a topping to
roasted veggies, fresh heirloom tomatoes or in raw or cooked tomato soups.

roasted starchy vegetables such
as potato, carrot, kumara, beetroot, onions, parsnip, or pumpkin, 1 - 2 cups of non-starchy vegetables such
as steamed silverbeet, broccoli,
zucchini, cauliflower with salt, olive or avocado oil or butter for fats, one chicken leg (100g meat), skin on or off.
