I had no fresh tomato but all the other «salad» ingredients so I drained a can of diced fire
roasted tomatoes as my substitute.
If doing so, simply skip the step for
roasting the tomatoes as the roasted onions and fennel will add enough flavor themselves.
I used them for a breakfast dish with bacon, eggs and
roasted tomatoes as a weekend brunch dish, so good, so good.

I love them all, but if I had to pick a favourite then I'd say the sun dried
tomato and basil flavour is the best
as it's just so rich in flavour but the
roasted aubergine and carrot flavours were real hits with my friends.

I
roasted the squash
as others suggested and then sauteed onions, garlic and spices (I just eyeballed them and added lots more), then added black beans, some homemade
tomato puree I had just made, the wheat berries and 1 cup water and simmered for about 15 minutes.
Top with things like hummus / pesto /
tomato sauce
as a base, loads of
roasted veggies, your fave herbs / spices and some chickpeas / lentils for extra protein.
