If you have time to
roast a head of garlic, you could mash it and rub it all
over the
cauliflower steaks instead of using garlic powder.
I'm not perfect, I burn the
roast chicken, I make butt ugly but darn delicious beetroot tarts with
cauliflower crust, I dust coconut flour all
over the camera and piss off J but whatever.
Directions: Using a mortar and pestle, or a small grinder, mix garlic, ginger and half of the peanut oil to form a thick paste / Add other spices, half of the water (1/2 C) to this mix, stir together and set aside / In a sauce pan, heat the other tablespoon of oil to medium hot, add cumin and mustard seeds and allow them to sizzle momentarily / Add spice paste, turn heat to medium low, and while stirring, allow to cook for 1 to 2 minutes / Add
cauliflower and potatoes, sweet or hot pepper if using / Stir together so that vegetables are coated with the spices / Add the other 1/2 C water, place a lid on, and simmer for 10 — 15 minutes, until vegetables are tender / Remove lid and simmer for another 5 minutes / If vegetables are done, remove them from the pan and continue to simmer the sauce until it reduces and thickens slightly — just a minute or two / Add
roasted asparagus to the bowl / Spoon sauce
over winter and spring veggies, sprinkle with chives.
Lunch: Leftover vegetarian bolognese
over polenta cakes with
roasted cauliflower and clementine
(Or if you're super low - energy, just sauté the meat and the pepitas until the meat is nicely browned and serve
over a
roasted sweet potato, mashed
cauliflower, or zucchini noodles.)
The recipe is pretty straightforward though, and if you multitask by cooking the lentils while you
roast the
cauliflower, you can have dinner on the table in a little
over a half hour.
After some head scratching, I resorted to the internet and came up with a recipe for
roasted cauliflower with cocoa and smoked paprika
over on ChefShop.com.
We fight
over the crispy, oily
cauliflower bits left on the
roasting pan which, I guess, is better than fighting
over lots of other things...

While
cauliflower roasts, coat the bottom of a large pot with remaining 1 tablespoon of olive oil and place
over medium heat.
Place the
cauliflower in a
roasting pan and into the oven for 1.5 hours until browned all
over and tender when a skewer is inserted.
On a heavy baking sheet or
roasting pan, drizzle a little olive oil and spread
over bottom, dump the
cauliflower pieces in a pile, drizzle with remaining 2 teaspoons oil, sprinkle with 1/2 teaspoon salt, and mix together well with your hands, coating all pieces of
cauliflower.
Drizzled
over roasted cauliflower or pasta?
Toss in the
roasted peanuts and serve
over cauliflower rice with chopped cilantro, additional peanuts if desired.

While the
cauliflower is
roasting heat a large soup pot
over medium - high heat and sauté the onions and garlic for approximately 3 - 5 minutes.
After seeing delicious
roasted whole
cauliflowers all
over the internet, I finally decided to try it.
Layer the
roasted cauliflower slices
over the hummus.
I used some leftover
roast chicken to throw together a coconut chicken curry with peppers & onions
over cauliflower rice.
Serve curry
over rice topped with drained pickled chiles,
roasted cauliflower, fried shallots, and cilantro sprigs.
While
cauliflower is
roasting, melt 4 tablespoons of butter in a heavy skillet
over medium heat.
Add the
roasted cauliflower, almonds and stock to the pot and simmer
