If you're successful making your fudge without a thermometer, just make sure your candy is at
a rolling boil for 4 full minutes and you should be fine.
The best method I have found is to bring the water to a boil, put the rice in, stir for a second and let boil at a full
rolling boil for about 7 minutes.
