We used a
rotisserie chicken from the grocery store and sliced that up (minus the
skin) instead of cooking the
chicken ourselves.
Fish sauce (Red Boat is gluten free, but some are not) Store - bought
rotisserie chicken (some may use seasonings containing wheat, flour is sometimes used to help seasonings stick to the
skin, breadcrumbs are sometimes used as stuffing.

chicken with its
skin intact means that you end up with all the best of a
rotisserie / roasted
chicken — the crispy
skin and moist meat — in a fraction of the time.
Make sure to get a
rotisserie chicken with lighter
skin, which will produce better flavor.
Pull
skin and bones off 1/2
rotisserie chicken and discard.
