I actually made these for Canadian Thanksgiving back in October (along

roulade, so I bought the two together and came up
with this beauty.
An easy - to - make
roulade of chicken breast is stuffed
with layers of prosciutto, provolone, and peppery watercress and served
with a rich mushroom sauce.
To assemble the
roulade: season trimmed duck breasts
with remaining smoke powder, salt and pepper, place on cured duck slices, layer
with spinach leaves, then pipe the mousse.
Remove
roulade from foil and plastic, cut in half and sear in hot skillet until lightly brown on all sides, basting
with hot duck fat.
This impressive looking turkey
roulade can be stuffed
with your favourite stuffing, and requires much less time to cook than a whole turkey.
Black's menu featured truffle - scented duck
roulade; Utah honey - lacquered duck - thigh riblet and pan seared foie gras
with potatoes gratin; celeriac and pea puree finished
with a rhubarb chutney; and summer vegetables.
So far nothing has gone terribly wrong
with the recipes, save for a mango pudding that wouldn't set and a chocolate
roulade (cacao powder replaces the chocolate and Woodward uses buckwheat or brown rice flour) that refused to roll.
Beginning
with a short side, roll up each turkey piece, gently pressing on filling while rolling (don't roll too tightly, or filling will slip out of the ends) and tie

with string.
