I used a basic
royal icing recipe to decorate the

Typically,
Royal Icing is used on a harder
cookie for the stability.
I baked and cooled the circle - shaped
cookies, then flooded the base layer with
royal icing, and added some sprinkles.

royal icing and that seems to make all the difference.
After baking: drizzle with a simple confectioners sugar and milk glaze, or as shown above, use a more substantial
royal icing and apply various
cookie decors while the
icing is still wet.

Once the
cookies were baked and cooled, I covered them in a base coat of flooded
royal icing.
While I used the
cookie base recipe from the book, I actually switched the recipe a bit to include a lemon curd and a meringue topping (the original recipe doesn't call for curd and the topping is a
royal icing).
Let it dry completely before covering the surface of the
cookie with
royal icing.
Note: It is important to bake these
cookies until the edges are brown, especially if you are going to frost them with
royal icing as you do not want the
icing to soften the
cookies during storing.
