Here I have made a smaller batch than the original and used medium - sized Yukon Gold potatoes instead of the large
russets so the recipe is a little different — perfect for 3 to 4 people.
I didn't have any red potatoes but I had sweet potatoes and
some russets so I did a mix and cut them small.

Sweet potatoes have
so much more nutritional value than your basic
russet or Yukon gold, I'd be a fool not to make those instead.
Amanda — I think you could use sweet potatoes here, however, the floury texture that you don't like in
Russets is exactly why they're great for latkes — they're not very waxy or overly moist - seeming,
so they crisp up well.
Russets are the best baking potatoes,

russet / white potatoes are better than sweet potatoes after all?
Saying that, I do also find across the board in all brands that very dark reds or
russet browns never last as well as true reds do, including such shades from my beloved Colourpop,
so it's possible the pink or red shades from this line might last better through eating than Unicorn Blood did.
