This combination makes a lovely
salad with some basil leaves and a spoon of very good quality olive oil, a slick of equally good balsamic vinegar and a grinding of black pepper.

I've read you can save whole

basil in the freezer, so we have washed and prepped some to test out this winter (http://www.rodalesorganiclife.com/food/preserving-
basil) and will also just blend up some
leaves with the oil and freeze in ice cube trays to defrost and add the vinegar later and top a winter
salad.
It all goes into a lovely
salad,
with a bit of
left over whole - wheat
basil - tomato - garlic pasta from late last week.

Place the
salad leaves on a platter and top
with the grilled vegetables, olives and
basil.

Salad: Combine two medium - sized tomatoes
with a couple slices of fresh mozzarella and 1/2 cup
basil leaves.
I also pair it
with a hearty
leaf salad (kale, spinach, romaine)
with a sun - dried tomato
basil dressing.
I love mint
leaves in kale
salad, or
basil and cilantro
with mixed greens.
Toss the whole tray of roasted tomatoes, juices included,
with some fresh pasta, mozzarella, and
basil, and what you're
left with is this roasted caprese pasta
salad, a very pretty and delicious meal.
