If you're new to using almond meal, keep in mind that almond meal (
same as almond flour) differs a bit from one batch to the other, so you may have to adjust the amount of liquid you use to get the thickness you want.

Not that it matters if everyone's macarons turn out fine, but I use Pierre Herme's recipe for mine and the only major difference I see between his and your's is that he uses the
same amount of sugar for the sugar syrup
as his «tant pour tant» ratio for
almond flour and icing sugar.
I was so surprised and happy to find this organic
almond flour at the
same price or less
as grinding it myself.
So to compare your's and his, he would use 140g of sugar for his syrup for the Italian meringue (
same as either
almond flour or icing sugar which is always equal).

you simpler can double the pumpkin and replace
flour with the
same amount of
almond or flax grounded: in this way you could omit 1 egg,
almond milk and baking powder... just incorporate
as much air you can with blender and let it thicken up a bit..
But
as I expected, the
almond meal separated from the other ingredients (I have had this happen in other recipes — it does NOT substitute for
flour, since it does not absorb moisture in the
same way) and created a jelly - like layer at the bottom of the cake (think «moist crust»).

I did notice on your chip cookie video that I use the
same measuring cups
as I do (I'm no fussy cook either) But it could very well have to do with that I buy Dutch
almond flour.
The second tine I made these using soy
flour instead,
as almond flour is quite grainy for me (and yes, I use the

almond meal (
same as ground
almond yes) and buckwheat
flour to make this because I find that using all buckwheat
flour makes the loaf too dense and gummy.
