you simpler can double the pumpkin and replace flour with the same amount of almond or flax grounded: in this way you could omit 1 egg, almond milk and baking powder... just incorporate as much air you can with blender and let it thicken up a bit..

Is the almond meal the same thing as the leftovers from making almond milk?
I know it's been a while since you posted this but I was wondering if Almond milk could work the same as coconut milk?
I do the same when I make Almond milk, I keep the left overs and add them to muffins as there is still alot of goodness in them (And it seems a waste to throw it away!)
