Hi Lucy, you could try using dried figs or prunes instead however they won't provide
the same sweetness or texture as dates.
In other words, this Turkish Delight recipe only calls for 1/4 cup of the honey and stevia blend, while you would need twice the amount (1/2 cup) of pure honey or maple syrup to achieve
the same sweetness without the stevia.
Mashed banana works well as a substitute for apple puree, however sadly it's difficult to get
the same sweetness and texture from low fructose alternatives.
