I'm always looking for ways to help people eat more veggies (most of us don't meet the 7 - 9 servings of produce per day), so I created
this sauce out of cauliflower.

Where do I buy Apple puree from, I could only find apple
sauce, I also noticed that I could still taste the
cauliflower but that maybe due to the fact I didn't squeeze
out all
of the water.
Use it as a dip or in a Buddha bowl if you run
out of the chipotle roasted
cauliflower tacos before the
sauce.
Between the chipotle
sauce and the seasoning for the roasted
cauliflower, the flavor is
out of this world.
We didn't overthink it, but made a fresh turkey, two kinds each
of stuffing (oyster and sausage) and potatoes (mashed and au gratin), cumin carrots, green beans with bacon and onions, hot and spicy cranberry

of cauliflower from Silver Palate — often referred to as «that
cauliflower dish» — and a staple for 30 years on my Thanksgiving table, homemade crescent rolls straight
out of Betty Crocker, and
of course Helen's Cherry Pie:
I toyed with the idea
of using purple
cauliflower in this or adding something green for color, but I actually like the reddish, slightly pink
sauce coating the pasta completely and bits
of white from the
cauliflower peeking
out.
They also sell prepared food like zucchini noodles with raw
sauce, collard green wraps,
cauliflower rice, and raw carrot cake cupcakes (though they were
out of the cupcakes when I was there!)
The
cauliflower is good enough that, even though it's a pain to make — what with the tahini
sauce and toasting pumpkin seeds and getting seeds
out of a pomegranate — I've made it several times, sometimes as a side for fish, but sometimes as a side for other dishes.
This is a naturally gluten free pizza, the crust is made
out of almonds and
cauliflower, and the
sauce is a dreamy cashew basil spread.
But remember, the
cauliflower is mild, and there's plenty
of vegetable to balance
out the heat in the
sauce.
There are a lot
of cauliflower tacos
out there, I know, but most
of them seem to be doused in hot
sauce (not my thing) so I've gone for lots
of spices and pickled onions for acidity.
To add in some meat protein and fat I sauteed onions and nitrate - free ham and mixed them in with roasted broccoli and
cauliflower as the base
of the casserole (leaving
out the noodles), poured the
sauce on top, sprinkled extra nutritional yeast on top to make a breadcrumb - like topping, and baked as directed, and this was absolutely stunningly delicious.

I devoured white asparagus with a delicious vinegar
sauce, local lamb with mushrooms and a thin brown
sauce,
cauliflower au gratin, chips, local goat cheese, and a pancake topped with sugar for dessert (normally crepes with apple filling but they were
out of apples).
