As turkey is known for drying
out at times, I added plenty
of moisture in the form
of grated
zucchini, grated onion and soy
sauce.
So instead
of pasta, make «zoodles»
out of zucchini and serve with tomato
sauce or pesto (and drop in a few mixed veggies for still more servings!)
They also sell prepared food like
zucchini noodles with raw
sauce, collard green wraps, cauliflower rice, and raw carrot cake cupcakes (though they were
out of the cupcakes when I was there!)
Our garden is overflowing with

Perhaps I didn't wait long enough for the
zucchini to dry
out (grated and squeezed it in a towel, waited 20 minutes) or was my defrosted homemade
sauce too liquidy and perhaps too much
of it on the crust?
The tartness
of the beets plays off the sweetness
of the sweet potato, and the
zucchini and summer squash add coolness to balance
out the heat from the
sauce.
