The
banana rum caramel
sauce is spread

banana slices, then layered with the fluffy whipped coconut cream.

over, say, grilled
bananas, perhaps pears, vegan pound cake or ice cream (or both!)
Cook gently until
bananas are soft, turning occasionally and spooning
sauce over them.
Allow the caramel
sauce to cool 10 minutes before pouring
over the
banana bread.
Serve the
banana on top of the french toast and use any leftover
sauce to drizzle
over the top.

To serve, place the
bananas on individual serving plates, drizzle a teaspoon of the remaining
sauce over them, top with a dollop of whip cream, and garnish with the grated nutmeg.
This is an unbelievably easy way to make dulce de leche, a rich, intensely sweet
sauce that can be drizzled
over tamales, ice cream, poached pears, grilled
bananas or almost anything you can think of.
Our new favorite is a scoop of vanilla
over a slab of
banana or zucchini bread and blanketed with the fudge
sauce.
It would make a nice smooth hot chocolate
sauce over homemade coconut ice cream or frozen pureed
bananas.
