tortillas are cooking, heat the beans in a small
sauce pan
over medium - low heat for 2 to 3 minutes.
If you have time, put the filled
tortillas in a baking pan, pour enchilada
sauce over them, add a sprinkling of shredded cheese, and bake till hot and bubbly.
Add remaining chicken mixture, ladle one cup of enchilada
sauce over mix and cover evenly with
tortillas.
Coat the remaining
tortillas in the
sauce and place on top and scrape any remaining
sauce over the enchiladas spreading to coat evenly.
